Litti Chokha – A Legendary Bihari Dish

Though Bihar has rich variety of dishes but when you talk about Bihari dishes you will hear about Litti Chokha before anything else. It is a delicious dish if prepared well.

Litti Chokha is not only a food for Biharis, over the years it has become their pride.

Here we are presenting the recipe of Litti Chokha. We need to prepare three things 1) Dough for Litti 2) Stuffing to be filled in Litti 3) Chokha.

Below ingredients are needed:

For dough :

  • Wheat flour
  • Ajwain(carom seeds)
  • Ghee
  • Baking soda
  • Salt

For stuffing(Pitthi)

  • Sattu (bhune chane ka aata)
  • Ginger
  • Green Chilly
  • Chopped Green coriander (Dhaniya)
  • Cumin Seeds (Jeera)
  • Carom Seeds (Ajwain)
  • Mustard Oil
  • Pickle Spices
  • Lemon Juice (if you prefer)
  • Salt

For Chokha:

  • Brinjal
  • Tomato
  • Green chillies
  • Ginger ( finely chopped)
  • Green coriander ( finely chopped)
  • Salt
  • Mustard Oil

Now we have arranged all the ingredients to make delicious Litti chokha.

Preparing Dough

Mix 1/2 tea spoon Ajwain, 1/2 tea spoon salt, 2 tea spoon Ghee with approximately 400 grams of Wheat Flour with with the help of water to make soft doughs. Once the dough are prepared leave it for 30 minutes.

Now we will prepare the stuffing which will be filled inside the doughs prepared.

Preparing Stuffing

Mix finely chopped ginger, green chillies as per your taste, finely chopped green coriander leafs with Sattu along with 1/2 tea spoon of Salt, 1/4 tea spoon of Jeera and Ajwain and Lemon Juice. Add 3 tea spoon mustard oil and 1/2 tea spoon of pickle spices. Finally add 2 tea spoon of wanter and mix the ingredients well. The stuffing is ready.

Now lets prepare litti.

Preparing Litti

Divide the dough in equal sizes as we make for making roti. Put 1-1.5 tea spoon of stuffing inside the dough and close from all sides. Now these stuffed pieces should be pressed slight to make it slightly flatter. Now it is ready for baking.

Traditionally Litti are cooked on Upla or on coal but we can use Tandoor or Tawa as well. Bake the Litti in Tandoor or on Coal Flame till it becomes golden and you observe that it is cooked completely. Keep rotating Litti while cooking.

Now delicious Litti is prepared and we have to prepare Chokha to eat with Litti.

Preparing Chokha

Cook Brinjal  and tomato on open flame or in tandoor. Once their skin become black then peal off their skin. Boil potato and peal off their skin. Now mix Brinjals, Potatao and Tomato and smash them. All chopped onion, mustard oil and salt in the chokha and mix well. Your Chokha is now also ready.

You are now ready to taste Litti Chokha which is a very famous dish of Bihar.
